Juniper
Junipers are arboreal or shrub conifers, belonging to the Cupressaceae family.
Juniper berries are somewhat bitter, with citrus and sweet undertones. The berries of these shrub conifers are responsible for the essence of this drink, its bitter and intense flavor that characterizes them. To a large extent, the quality of a gin is due to the properties of the juniper used to rectify distilled barley.
Grapefruits
The perfect blend of sweet and sour. The evergreen grows up to 15 meters tall and thrives in a frost-free, warm climate. The bay (Laurus nobilis) is a shrub or perennial tree belonging to the Lauraceae family, to which it gives its name. It is a shrub native to the Mediterranean. The bay has a balsamic aroma, intense, fresh and sweet, with a spicy note.
Cardamom
The cardamom flavor is very intense and penetrating, sweet and slightly spicy. It is reminiscent of the citrus aroma, because it shares limonene in its essential oil and eucalyptus, due to its high cineole content.
Jamaican pepper
Allspice grows in clusters that are collected when they are still green. They are left to dry in the sun, at which point they acquire that characteristic chestnut color. As for the flavor, it is slightly spicy and reminds of a combination of cloves, nutmeg and cinnamon.
